Inspired by... kids
Every year as I look ahead to the next year's calendar,
I always mark off, with big red X's, these four days in mid-July.
And, true to form, these last four days have been utter craziness (but fun craziness)!
Even as I write this, I'm keeping an eye on the clock so that I'm not late for...

The final night of Sport's Camp 2011!
It's a fun-tabulous time of praising God and learning sports like, Volleyball, Basketball and basic Agility. We host this event every year for kids 4-12yrs in our community.
They love it!
...and keep coming back year-after-year!
This year, I've been in charge of cooking the meals for the fifty+ volunteers and snacks for the forty+ kids that attend the camp. Hence the craziness at my house!
Deciding on the snacks for the kids was probably the most challenging. I wanted to stay away from store bought, sugar and preservative packed foods.
Mrs. Smilemoster and her One Cool Summer party saved the day! I made the Root Beer Pops and Fudgcicles (shared by Wonderful Joy Ahead) and the kids absolutely loved them!
These granola bars were also a big hit. They turned out great and were very easy to make.
Here's the recipe:
Gobble Up Granola Snack

Ingredients:
- 2 1/2 cups crispy rice cereal
- 2 cups quick-cooking oats
- 1/2 cup raisins
- 1/2 cup packed brown sugar
- 1/2 cup light corn syrup
- 1/2 cup crunchy peanut butter
- 1 tsp vanilla extract
Directions:
- In a large bowl, stir together the rice cereal, oats and raisins. Set aside. Grease a 9 x 13 baking dish with cooking spray.
- Combine the brown sugar and corn syrup in a saucepan over medium heat. Heat just until boiling, then remove from heat and stir in the peanut butter and vanilla until smooth. Pour over the cereal/oat mixture and mix well.
- Press into prepared pan. Allow to cool, then cut into squares.
- Enjoy!
