Looking for an easy, satisfying dinner recipe that maybe you haven't tried before?

I'd like to share with you one of my favorites, hopefully one you haven't tried before.
Chicken Enchiladas
Adapted from Kraft: Favorite all time Recipes
2 (12.5oz) cans all white meat premium chunk chicken
1 cup chopped green or red pepper
1 pkg (8oz) cream cheese, cubed
1 jar (8oz) salsa, divided
6-8 flour tortillas (6in)
12oz Velveeta cheese spread, cut up
1/4 cup milk
Stir chicken, pepper, cream cheese and 1/2 cup of the salsa in medium saucepan on low heat until cream cheese is melted.
Spoon approximately 1/2 cup of the chicken mixture down center of each tortilla; roll up. Place in lightly greased 12x8-inch baking dish.
Stir process cheese spread and milk in small saucepan on low heat until smooth. Pour sauce over tortillas; cover with foil.
Bake at 350F for 20 minutes or until thoroughly heated. Top with remaining salsa. Makes 4 to 6 servings.
I usually buy a 16oz salsa and mix the extra 8oz with the remaining Velveeta to make a nice queso dip. These enchiladas are very nice served with a simple side of chopped lettuce and tomato and I usually make some fresh guacamole to go along with them as well.
