Inspired by... easy dinners
I haven't posted a recipe in awhile... how about some meatloaf?
I have to tell you, I'm not a big "beef" fan, {I realize, living in Texas, that I'm taking my life in my hands by admitting such a scandalous truth...} but this little loaf turned out mighty tasty!
Adapted from a recipe on allrecipes.com, let's see if I can remember what I did...
Sweet Onion & Garlic Meatloaf
Ingredients:
1/2 cup ketchup
1/3 cup brown sugar
1 T lemon juice
1 tsp mustard powder
2 lbs ground beef
1 cup bread crumbs, Italian style
1 can sweet onion & garlic diced tomatoes, well drained
1 egg, beaten
1 bouillon cube, crushed
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl, combine the ketchup, brown sugar, lemon juice and mustard powder.
3. In a separate, large bowl, combine the ground beef, bread crumbs, diced tomatoes, egg, bouillon and most of the ketchup mixture (leaving just enough in the bowl for spreading on top of the loaf). Mix well and place in a 5x9 loaf pan.
4. Bake at 350 degrees F for 1 hour, then drain an excess fat, coat with remaining ketchup mixture (add more ketchup if needed) and bake for 10 more minutes.
Slice, and serve up with your favorite sides! Don't forget the leftovers. This made a great sandwich the next day!
