Inspired by... salad

 

Re posting this recipe for my all-time favorite salad because I want to share with everyone the fabulous recipes being posted at Tidy Mom's Salad Social today!

I love it! and it's perfect for filling with:

 

 

Spinach Salad

(Recipe source: Taste of  Home)

1 package (6oz) fresh baby spinach

1/2 cup dried cranberries

1/2 cup chopped nuts (optional, we like pecans or slivered almonds best)

1//2 can mandarin oranges (optional)

1/2 to 1 cup feta cheese

1/3 cup olive or vegetable oil

3 tablespoons sugar

2 tablespoons balsamic vinegar

1 tablespoon sour cream

1/2 tsp Dijon mustard

In a bowl, combine the first five ingredients.  In a jar with tight fitting lid (or dressing cruet), combine the remaining ingredients; shake well.  Drizzle over salad and toss to coat; serve immediately.  Yield: 6-8 servings.

 

The warmer weather means we're craving lighter foods.  This collection of salads will give you plenty of choices throughout the summer months!
